A hot quenching (blanching) machine is an industrial system designed to loosen the natural skins of nuts, primarily Almond, and also Peanut, Pistachio, and in some cases Hazelnut. In this process, raw nuts are immersed in hot water—typically 85–100 °C—for a short, controlled period. The heat softens the natural bonds between the skin and the kernel while the skin absorbs moisture and expands, allowing it to separate easily without damaging the nut. This method is widely used for almond peeling to produce clean white kernels for confectionery and bakery applications, while also supporting skin loosening for other nuts in various food processing operations.
